Aquafaba — the liquid from a can of chickpeas — was discovered as an egg white substitute entirely by accident in 2014 by French chef Joël Roessel. Within months, the vegan baking community had used it to make meringues, macarons, and mayonnaise, all of which require egg white proteins.
